Chicken and halloumi salad
Serves 2-3
1 cup mixed leafy greens
1 carrot, finely chopped
1 celery stick, finely chopped
4 cherry tomatoes, finely chopped
1.5 cups your choice pasta
4 slices of halloumi (salt reduced)
1 chicken fillet
Cook pasta until al dente
Boil chicken for 10 mins or until cooked through
Add salad, pasta and chicken to a bowl and mix well
Cook halloumi for 2 mins each side using a frying pan and add to salad
Garnish with your choice of dressing and seasoning
Eat and enjoy!
