Prawn and mango salad
Serves: 3-4
Salad:
1 mango
1 cucumber, peeled
1 packet rocket
Handful of mint
500g prawns, peeled and cooked
Handful of macadamias
1T olive oil
Sauce
1/3 cup plain Greek yoghurt
1/4 cup mango chutney
2 tsp chilli sauce
Make sauce by mixing ingredients together in a bowl.
Cook prawns in a fry pan on medium heat with oil for 2 mins each side.
Assemble salad as desired.
Serve with your choice of roast veg and eat and enjoy!
